200ml fresh lemon juice
500g granulated sugar

For the Drink (produces 850ml, enough for 10)

200ml clementine cordial (as made above)
A few cranberries, to garnish

Instructions

To prepare the Citrus Syrup: Place the listed items in a pot, heat until it reaches a gentle boil, mixing so the sugar melts. Next, remove from the burner allowing it to cool down fully. Pour into a sterilised bottle, close it and refrigerate it in the refrigerator, where it will keep for around four weeks.

To make Batch Mix: Pour all the liquid ingredients into a sizeable container, allow it to infuse for 60 minutes, then strain best through cheesecloth, making it fully clarified.

When ready to serve: Add 85ml of your premix into a stirring glass containing ice, and stir gently for about 60 seconds to cool it down. Pour into an cold coupe glass or similar, decorate with the cranberries and complete it by giving it a light spray with the mandarin essence over the drink.
